The Patagonian toothfish or Chilean sea bass, Dissostichus eleginoides, is a large fish up to 6 feet long and lives for up to 50 years. It lives in the cold temperate waters of the South Atlantic, South Pacific, Indian, and Southern oceans on continental shelves around most sub-Antarctic islands, Southern Chile, Argentina, Falkland Islands, Shag Rocks, and South Georgia. The Patagonian toothfish is known in the food trade as the Chilean sea bass, and has been severely over-fished to the extent that it is currently on the list of fish that American consumers who are sustainability-minded should avoid. The list, called Seafood WATCH is maintained by the Monterey Bay Aquarium.

The Patagonian toothfish fishery is the most lucrative fishery in the Antarctic and sub-Antarctic. Illegal fishing threatens the species as the fish is slow-growing and only reaches maturity between ten and twelve years of age. Its resilience is very low, the minimum population doubling time being up to 14 years. Illegal catches may be up to five times the legal catch limit, and researchers have predicted a total collapse of the fishery within two to five years. The longline fishery has also been criticized for drowning thousands of seabirds. According to The Antarctica Project, "It is common practice in the illegal fishery to dynamite the sperm and killer whales when they are discovered in the area where the fishing takes place and hundreds of thousands of endangered albatrosses and petrels dive for the bait and become hooked and drowned." The average weight of commercially caught Patagonian toothfish is 20 pounds, and large adults can occasionally reach 440 pounds. They eat squid, fish, and prawns,, and are themselves eaten by whales, Southern elephant seals, and colossal squid.
